I could use some simple vegetarian recipes. My son is bringing his girlfriend home for spring break in a couple of weeks and she's a vegetarian. She eats dairy and egg products, thank goodness, but I could use a good vegetarian pasta dish and chili recipe if anyone has a favorite. A vegetarian soup would also be good. Things I could put in the crock pot get extra bonus points! (I'll be working that week).
If you have President's Choice brand there, they make a good vegetarian lasagna. Most pastas could be served with a non-meat sauce or Alfredo or pesto sauce would work.
I'm always at a loss for vegetarian dishes too, although my vegetarian friend does eat fish (not sure when salmon became a vegetable, but I'll cook it!) Maybe the girlfriend cooks and she could show you a recipe or two.
My current favourite recipe is one I sort of created myself.
I take one whole onion and chop it then soften it in a couple of tablespoons of olive oil. I add one whole pepper, chopped, either yellow or orange, or a combination of both, and continue cooking until soft. At the end, I add in about 2-3 cloves of garlic, either crushed or cut into small slices, depending on how strong I feel like making it.
Once the veggies are softened, I add in two cups of chicken broth and about one and a half cups of white wine. I also add in one can of cherry tomatoes, drained. If I can't locate canned cherry tomatoes, I have used plum, but it doesn't work out as well.
I let the mixture boil until it has been reduced to about 1/3 to 1/4.
While the sauce is cooking I cook either linguine or fettucine noodles and mix in with the sauce.
I realized after I typed this all that I said CHICKEN broth... oh well, I guess you could try a vegetable bouillion as a substitute. Does the chicken oxo have any actual chicken in it or is it just artificial flavours???

This is delicious except there must be a higher ratio of fat in it. (Perhaps the fat could be reduced by using low fat cheeses)
Spinach Roll ups preheat oven 375*
8 lasagne noodles cooked (I cook a few extra noodles in case one breaks)
Saute in 3 Tbs butter 1 red pepper = fine chopped 1/2 cup onion = fine chopped
Add 2 boxes frozen spinach Add 1 1/2 cup mozzarella shredded cheese 3/4 cup Ricotta or cottage cheese 1/2 cup Parmesan cheese 1 egg
In a Sauce pan: make a cream sauce with 1/4 c melted butter 1/4 c flour 1/2 tsp garlic salt 1 cup milk 1 cup cream 1/4 c Parmesan Bring to boil, stir constantly
Roll 1/2 cup spinach mix in each noodle like jelly roll Place into a buttered dish with a little bit of sauce on bottom. Pour thick sauce over. Top with 1/2 c Mozz cheese Bake, 375* til bubbly
In a fry pan add two TBS Margarine,and 1 sliced med onion, cook until translucent. When onion slices are ready add two TBS of brown sugar and let caramelize add some dried cranberries and let cook until berries are puffy .. add to rice and serve
Just as long as you remember, gelatin is made from bones and cartilege so it's a no-no. Most Chinese foods have fish oil or oyster sauce which makes the foods non-vegetarian. Also, if you cook anything in chicken or beef broth, it's non veggie. You wouldn't believe how many restaurants list something as being veggie but it's cooked in meat broth!
As far as recipes, I barely cook so I'm of no help there. I do get a lot of the President's Choice foods, but I think it's a mostly Canadian line.
