Thought I'd start this forum off with my favorite salmon recipe. Generally I get the large fillets of salmon in the giant discount stores, then divide it into individual portions for freezing. They thaw easily in the refrigerator as needed.
In a microwavable dish, the salmon portion is seasoned in this order: (all to taste) lemon juice Good Seasons prepared Italian salad dressing garlic salt minced or finely diced onion generously over the top
Next to the salmon, I have a serving of spinach seasoned with vinegar, Smart Balance and Molly McButter
Optional: Cover both with a slice of white American or your favorite cheese.
Cover the dish with a glass casserole lid and nuke at a medium power til done. .... Check for doneness and stop the cooking as soon as the salmon is completely cooked because over cooking will dry it up.
