I'm warning you all in advance that this is not an exact science, but it's sooo delicious!
I make about 3 cups of pasta, whatever you like, I use penne most often. Reserve 1/2 cup of the pasta water.
Cut 5 slices of bacon into about 1" pieces and fry them up until about medium crispy. To the pan I add about 5-6 cloves of garlic that have been diced into medium size pieces. I usually cook it at a low heat until the garlic has softened but is not browned. Add 1/2 cup of chicken broth and 1/2 to 1 tsp of chili flakes (depending on your tolerance for heat). Simmer on low for a minute or two. Add in the cooked pasta and mix together.
Mix two egg yolks and salt and pepper to taste in with the pasta water. Pour over the pasta. Cook over medium low heat, stirring constantly, until the egg mixture has thickened onto the pasta. At this point I mix in grated parmesan cheese to taste, usually about 1/4 cup.
That's it... serve and enjoy. That does about 2 servings.
