Allrecipes.com is my favorite recipe site. I rely on it all the time. It has a recipe for just about anything and I like to read the reviews to get an idea of what people liked and didn't like about it.
I can't really think of any GREAT vegetable recipes off the top of my head but my whole family loves roasted asparagus. I just trim the asparagus and put it on a foil lined baking sheet, drizzle it with a little olive oil and kind of roll them around to coat. I lightly salt and pepper it and bake it for about 10-12 minutes at 400. Sprinkle with some paramasean cheese and put back in the oven for a couple of minutes. What's nice about this is you can make as little or as much as you want!
Love your asparagus idea! Definitely plan on trying this one.
Went exploring in Allrecipes and found a recipe for marinated veggies which calls for 3 Tbs of grated onion. It sounds good but just reading this one makes me cry! How can anyone grate an onion? Mercy!
Ruff, you need to invest in a little Black and Decker Handy Chopper for your onions. It's about the size of a large coffee mug and works great for chopping onions or breadcrumbs. It makes them very fine, no tears and no smelly hands. I'm not much of a gadget person but this one is a gem.
Uncle Dan's California Dill dip is a great way to eat veggies. I make it with fat free plain yogurt, low fat sour cream and just a bit of mayo. I think I'd eat hay if I could dip it in that stuff.

I've never had much success with grating onions. I always end up with mush and a lot of juice not to mention the tears! I've heard that you can stick the onion in the freezer for a bit before chopping (or grating) and that cuts down on the tears but I've never tried it. I like Meggie's idea of the chopper. I think I have an old one from Pampered Chef in the back of my cupboard. I'll have to dig that out...
Meggie, I've never heard of Uncle Dan's before. Is that something you get in the grocery store or do you order it? I love the idea of making it low-fat. As for the hay, well... I'll leave that for you and stick to the veggies! LOL!

I've used Uncle Dan's for years and never looked to see where it is from--Spokane, WA and also packed in Vancouver. I see from the web site that the Dill one has a different name in the US. The 'original' is yummy too!. It's one of the small packaged salad dressing mixes from the grocery store. Most of them call for equal mayo and sour cream, but I make them with fat free yogurt & sour cream, and just add a tablespoon of lite mayo. I like the flavour and the calorie count doesn't sabotage the veggies.

Never heard of Uncle Dan before. I went to the site half expecting recipes but these are salad dressing mixes. These may not be sold here. I love Good Season's Italian dressing mix and keep a batch made in the fridge. It adds great flavor to many things.
Hmmm, those look really good. I may have to order some and try them out. I can't say I've ever looked that closely at the dressing mixes in the store but I don't think we have much other than the Hidden Valley stuff. I often buy the Marzetti's fat free ranch dip but that gets kind of boring after a while. I like the different varieties they offer and it would be nice making them yourself when you needed them. Thanks for the tip!
